Bacchanale to Host Pop-Up Café at Market Art Fair
This year at the fair, we have the opportunity to work with Bacchanale, who will host a one-weekend-only pop-up called Bacchanale Café.
Located on Ringvägen in Södermalm, Bacchanale offers a menu inspired by the Mediterranean, prepared with the best local ingredients, and is helmed by Kalle Nilsson, Jonas Helgesson and Kalle Ramberg.
Nilsson and Helgesson, childhood friends from Motala, grew up together and ended up in the same class at culinary school. After graduating, they each went out to explore different countries, cuisines, cultures and restaurants before reuniting to open Främmat in August 2020. Located in Vasastan, the restaurant was early on praised for its atmospheric and “stimmiga” setting and its new approach to French classics.
‘Our philosophy around food is based on tradition, but we love to add elements of surprise or something that goes against the norm.’
One of the first employees in the kitchen, a few years younger than the founders, was Kalle Ramberg, who later became the third partner when the trio opened Bacchanale in the spring of 2024.
‘His dedication and natural way of providing service made him a key player and a natural choice for us to invite as a partner when we opened Bacchanale. Curiosity and an open mind are what bring us together.’
‘Travelling, visiting markets and eating in other restaurants have always been sources of inspiration. Growing up in Sweden left us hungry for more. We’re always interested in exploring different cultures and bringing back new influences, whether in food or atmosphere.’
They are now preparing to run this four-day pop-up in a tent at an art fair – a new setting and a way of working outside not only their own space, but outside the traditional restaurant format.
‘Working outside our usual space is always slightly challenging. You have to reconsider your standards when you don’t have a proper kitchen or running water, for instance. The great thing is that it can make you come up with new ways of working that you might not have considered otherwise.’
All of this has resulted in a menu that brings their usual flavour profiles and ingenuity to simple yet well-made café food, served throughout the fair – for breakfast, for a fika between a new collector and a gallery, or for a quick snack before heading off to an after-fair event.
‘People don’t come to an art fair to eat. But there comes a time when they get hungry. Our idea was to make something they can eat on the go without having to think too much about it, but that’s still enjoyable – completing their experience.’
Bacchanale Café will be open during the fair’s opening hours.
